onggi teapot with iron handle

onggi is a korean term meaning a dark mud glaze.
in Korea this glaze is typically used for the ubiquitious
storage jars containing endless varieties of kimchi,
hot pickled vegetables.
but other shapes can be onggi-glazed as well,
bottles, bowls and various kitchen utensils are common.
in this case itīs a teapot thatīs covered with this humble
glaze. itīs made from only two ingredients, one of which
being a brick-clay that I dig myself from a nearby deposit.
I received the glaze recipe from a fellow apprentice in
Japan, a Mr. Lee from Korea.
the shape of the teapot is also a quote from Korea, related
to the storage jar with its overlapping lid.

speaking of recipes, this is one for a kimchi base,
you can pickle any vegetable in it, cabbage, radish, beet...
200g hot red pepper (ground)
2 bulbs garlic (grated)
1 ginger root (grated)
100g tiny shrimp preserved in salt (they are about 1cm long)
1 apple (grated)
1 leek (cut in 2cm lenths)
20g salt
1 cup of sardine soup stock (25g sardines boiled in water for 1h
and reduced to 1 cup)
